I think the "convert to DV" that you saw in the documentation was actually
referring to the "capture off the raw device" functionality (although I may
be wrong).
Check this thread; this guy seems to think he figured out how to get ffmpeg
to convert to type 2 DV format (which is something Kino claims to support;
YMMV as I've only ever used the "raw" DV format with kino):
