I've always used sox, audacity, and lame for this, on Linux.
One of the commands in the sox package is "rec", which
records the line-in to a WAV file; I record the entire side
of the cassette tape with rec, then use audacity to break it
into tracks.
Audacity makes it extremely easy to find the gaps between
songs; it displays the waveforms of the audio tracks, and
the gaps are easy to identify visually.
I never felt the need to look for a way to automate splitting
at the gaps, but I imagine it would be fairly straightforward
to do; someone has probably written such a tool already.
Once I've saved each track to a separate WAV file, lame
does a great job converting them to mp3.
