Best backup option for spanning CDR's?

I would like to institute a more regular, thorough backup scheme at home
on my main Linux server.  Ideally, I would like to be able to backup
spanning multiple CDR disks automatically.  I don't mean writing part of
a file on one disk and part of a file on the other, I mean when one disk
is full enough that the next file won't fit, it should prompt for
another disk and continue with the next file.

My main constraint is that I would like the files written uncompressed
so that I can copy off arbitrary files from the CD at a future date.

The other that it be free or very low cost, since this is just for
personal use.

As a side question, is there an easy way to tell whether a file is an
ASCII text file as opposed to a binary?  One backup option I am
contemplating would be to back up all text files under 300K or so, which
would encompass most if not all configuration files.  In other words,
back up only what I would need to make a new install work like the old
system, given I would most likely install the OS fresh after a crash
anyway.
