As I had mentioned, some of the parameters can be set in your email client
program, whichever one you use, and some can be set in your mail server
software, such as sendmail.cf. I suggest that you get a book on sendmail.
O'Reilly has a book on sendmail, "Sendmail, 2nd Ed.".
